Pure Olive Oil is pressed in the same way as Extra Virgin, however has a higher acidity level and a lighter taste. It can be used as a condiment but is more suited for cooking and frying vegetables and fish in particular. Olive Oil can be heated to very high temperatures without burning or smoking, hence why it is so ideal for frying, sauce making and other cooking.
